
“Staying in the Seven Stars Hotel in the main street of Hay was another delight.
This 16th century building retains many original features and all is original charm. Oak
beams, stone walls and quirkily sloping floors give this centrally located hotel its unique
quality. There are two other features of note; the hotel has both a swimming pool and
sauna. If you stay in the ‘pool room’, which we did, drawing back the French doors
allows you to step straight through to the pool area for an early morning swim; delightful.
And better still owner Russell Sime is an accomplished chef who produces breakfasts
that are beyond comparison. A combination of fresh locally sourced produce and
Russell's consummate culinary skills means that breakfast at the Seven Stars is an
experience to treasure.”
